i’ve been eating these out of the freezer all week. using this recipe, i made a batch, froze them and top them with icing right before i down them. the icing is simple; tasty, but not super sweet. I mix a scant ¼ cup of cream cheese with a dollop of cashew cream, or heavy cream, i’ve used and liked both, a teaspoon of grade a maple syrup (or more if you like) and a splash of vanilla extract. i only make a bit of frosting at a time, so not to waste it (the peril of cooking for two). the above mixture lasts me a few days. these are topped with my favorite jarred cherries.
